Made without grinding the leaves, it is slightly pan-fired, therefore referred to as a roasted tea. This initial steaming process imparts a more vegetal and grassy taste in the leaves, differentiating Japanese teas from that of Chinese grown green teas.
Water temperature determines the flavour. Hot boiled water makes it more astringent and cooler water makes it more mellow.
Directions: 1 level teaspoon per 200ml water. Steep for 3 to 5 minutes. Use medium hot water over boiling.
